Teriyaki Salmon Bowl + Tropical Pico

Skinless Atlantic salmon filet (we love the Trader Joe’s salmon!)
Organic baby grape tomatoes
Cucumber
Red onion
Pineapple
Jasmine rice
Dijon mustard
Organic coconut sugar
Paprika
Salt
Coconut aminos + hot honey (Trader Joe’s brand is our fav!)
Apple cider vinegar
Instructions:
Prepare the salmon – Dice the salmon into small cubes and place them in a mixing bowl. Coat with Dijon mustard (this helps the seasoning stick), then sprinkle generously with coconut sugar, paprika, and salt. Mix until well combined.
Cook the salmon – Place the seasoned salmon in the air fryer and cook at 400°F for about 13 minutes, or until crispy and golden brown.
Cook the rice – Rinse 2 cups of jasmine rice in a strainer 2-3 times until the water runs clear. Add to a pot with 3 cups of water (or bone broth for extra protein and flavor). Cook until the liquid is fully absorbed and the rice is soft and slightly sticky. Remove from heat and let it cool for a few minutes.
Chop the toppings – While the salmon and rice are cooking, dice the cucumber, red onion, pineapple, and tomatoes.
Assemble your bowl – Start with a base of jasmine rice, then add your crispy salmon, fresh veggies, and pineapple.
Finish with flavor – Drizzle with coconut aminos, hot honey, and apple cider vinegar. If needed, add a sprinkle of sea salt for extra balance.
